Cheesy, Beefy Avocado Quesadillas

Have you had a quesadilla before? Of course you have. But this one is better than the last one you had. Try it! Pairs perfectly with my Creamy Cilantro Dipping Sauce.

Cheesy, Beefy Avocado Quesadillas

  • 8 medium sized flour tortillas

  • 400g extra lean ground beef

  • 1 cup shredded Monterey Jack

  • 1 cup shredded cheddar

  • 2 tablespoons taco seasoning

  • 2 tablespoons water

  • 1 white onion, chopped

  • 2 serrano peppers, minced

  • 2 avocados, halved, pitted and chopped

  • Handful cilantro, roughly chopped


Cook ground beef in a large sauté pan over medium high heat, breaking it into pieces as it cooks. After 3 minutes add in chopped onion and Serrano peppers. Continue to cook until meat is browned and crispy. Drain fat and add in taco seasoning and water and stir to combine.

Preheat oven to 400F. Top 4 of the 8 tortillas with both types of cheese, the ground beef mixture, avocados pieces and chopped cilantro. Top them with the remaining 4 tortillas and place on prepared baking sheets. Cook in the oven until the cheese has melted and the edges of the tortillas are golden (approximately 8 minutes).  Cut and serve with Creamy Cilantro Dipping Sauce.
