Sometimes we want to eat our greens but are in a rush and tempted to grab some fast food. Make this a full meal by adding some grilled chicken or shrimp and a side of garlic bread.

Simple Kale Salad

Yield: Serves 2 as a meal



For the Salad:

  • 1 bunch curly kale, washed, stems removed and ripped into bite sized pieces
  • 3 tablespoons Parmesan cheese

For the Dressing:

  •  Juice of 1 lemon
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste

In a small bowl, whisk together ingredients for the dressing. Pour atop the kale and massage it in for approximately 2 minutes until tender. Top with Parmesan cheese and serve.
