Chamomile and Elderflower Cocktail

St. Germain is my jam. Elderflower liqueur makes everything taste better. I had to go to 6 different liquor stores to track down the bottle of St. Germain and it was totally worth it. This cocktail is my ode to spring time, which is hopefully right around the corner.  Wishful thinking, right?

Chamomile and Elderflower Cocktail

Yield: 1 cocktail


INGREDIENTS

  • 1 cup water

  • 1 bag chamomile tea

  • 1 tbsp. fresh lemon juice

  • Drizzle of honey

  • 2oz champagne or cava

  • ½oz elderflower liqueur (I used St. Germain)

  • Edible flowers (optional)


DIRECTIONS

Bring the water to a boil and add the tea bag. Let steep for 5 minutes, remove bag and stir in lemon juice and honey. Let cool to room temperature.
To assemble cocktail shake ~3oz cooled tea with the elderflower liqueur over ice for 1-2 minutes. Strain into a coup glass and top with champagne. Garnish with edible flowers.
