Halloween Cheesecake Brownies

Halloween Cheesecake Brownies

Ingredients

For the Brownies

  • 3/4 cup salted butter, cubed

  • 1/2 cup semisweet chocolate chips +  1/4 cup chocolate chips, for sprinkling over the top of the brownies

  • 1/2 cup cocoa powder

  • 1 cup brown sugar

  • 1/2 cup granulated sugar`

  • 2 eggs plus 1 egg yolk (room temperature)

  • 1 tbsp coffee

  • Splash vanilla extract

  • Black food colouring

  • 1 cup all-purpose flour

For the Cheesecake Layer

  • 1 (250g) package cream cheese, room temperature

  • 1/4 cup granulated sugar

  • 1 egg, room temperature

  • Splash vanilla extract

  • Orange food colouring

Directions

Preheat oven to 350F and grease a 9x9 inch pan (or line it with parchment paper). 

Place the butter and 1/2 a cup of chocolate chips in a microwave bowl and microwave for short bursts, around 30 seconds at a time, stirring in between until fully melted and combined.

Add cocoa powder and sugars and whisk until combined. Add in eggs and egg yolk, coffee and vanilla and black food colouring continue to mix until smooth. Lastly, add in the flour and stir with a spatula until just combined. 

In a separate bowl, beat together the cream cheese and the sugar until smooth and creamy. Using an electric mixer is easiest for this. Add in the egg, vanilla and orange food colouring and continue to beat until fully combined. 

Reserve 1/4 cup of the brownie mix, and pour the rest into the bottom of the prepared pan. Drop spoonfuls of the cheesecake batter over top of the brownie layer, and fill in the spaces with the reserved 1/4 cup of brownie batter. Use a knife to swirl the batter together. Sprinkle the remaining chips overtop of the brownies and bake for 25-30 minutes or until a toothpick placed in the centre comes out clean. 

Allow to cool fully before cutting and serving!
