Chicken Apple Sausages

Stampede is finally done but that doesn't mean I’m done with Stampede breakfasts. These usually include pancakes, sausages, some type of hash brown and maybe some bacon. Because they are free they aren’t usually using the highest quality products… so here’s a healthier substitution for all of y’all. Yeehaw!

Total time: 35 minutes
Yield: 12 patties


INGREDIENTS

  • 2 tsp. cooking oil, divided

  • 1lb. ground chicken

  • 1 small onion, grated

  • 1 sweet apple, peeled, cored and grated (I used Gala)

  • 1 tbsp maple syrup

  • 1 tbsp fresh sage, finely chopped

  • ½ tsp fennel seeds, chopped

  • Salt and pepper to taste


DIRECTIONS

Heat 1 teaspoon of oil in a large sauté pan over medium heat. Cook the onion for 2 minutes, add the apple and cook for an additional 2 minutes. The onions and apples should be soft and heated through. Transfer these to a large bowl and let cool for 5 minutes.

Once cooled, combine the apple/onion mixture with the ground chicken, maple syrup, sage, fennel and salt and pepper. Form the mixture into 12 balls and press them into patties that are around 2 inches in diameter.

Using the same pan, heat the remaining oil over medium heat. Cook the sausage patties until they are browned and fully cooked (approximately 3 minutes per side). You might need to do this in 2 batches, adding more oil to the pan if necessary.

Serve as a side with your favourite breakfast items and enjoy! P.s. these taste awesome dipped in maple syrup.
