The Best Soft Scrambled Eggs on Toast

Sometimes the easiest and quickest meals can still be elegant and satisfying. The most important part of executing this simple dish is to not overcook the eggs! Nothing is worse than rubbery, dry and overcooked scrambled eggs. If you cook the eggs low and slow, you will feel like you are eating at a high-end restaurant for breakfast from the comfort of your own home. This dish is not only quick & easy, but also great on your bank account! The entire meal is 3 ingredients that are most often already in your fridge/pantry. You can add in whatever other toppings you would like, or eat it as is!

The Best Soft Scrambled Eggs on Toast

Prep time:  5 minutes
Cook time: 5 minutes
Total time: 10 minutes
Yield: Serves 2

INGREDIENTS

  • 1 tbsp. butter

  • 4 large eggs

  • 2 slices sourdough bread

  • Salt and pepper to taste

  • Additional toppings of choice (sliced tomatoes, avocado, fresh herbs, cheese, arugula, hot sauce etc.)

DIRECTIONS

In a medium non-stick fry pan, melt the butter over medium-low heat. Whisk the eggs, season with salt and pepper and pour them into the pan. Place your bread in the toaster and toast away while you cook your eggs.

 Using a rubber spatula, stir the eggs continuously in small circles. The eggs should slowly thicken and start to set. Before the eggs are fully cooked, remove them from the heat. The eggs will continue to firm up once off of the heat, so keep this in mind so that they don’t get rubbery.

Spoon the soft scrambled eggs over top of the toasted bread, top with any other optional additions and dig in while hot!
