Two Ice Cream Based Dessert Recipes

I had the pleasure of partnering with Prairie West CanAsian Ice Cream to develop a couple of recipes using their Asian inspired ice cream flavours. Their ice cream is naturally flavoured, peanut free ice cream, made with Canadian Milk. 

I gravitated immediately towards the coconut flavour because it is always one of my favourites. I wanted the texture and flavour of a pie crust, but I didn’t want to turn my oven on, so the No Bake Coconut Walnut Ice Cream Pie was born. 

Because of the Asian inspired flavours, my mind wandered towards ice cream mochi. These Japanese treats are gaining popularity but the flavour selection is usually quite limited. I decided to put freeze-dried strawberry powder in the mochi dough and used the peach lemongrass and honeydew melon flavours for the filling. Yum!
