Maple Soy Salmon 

This is one of my weeknight go-to meals. It’s super simple, relatively healthy and makes great leftovers for lunch. I like to serve this with rice and roasted broccoli, drizzling the extra sauce from the salmon over top of both.

INGREDIENTS

  • 2lbs salmon filet

  • 1/3 cup maple syrup

  • ¼ cup soy sauce

  • 6 cloves garlic, minced

  • 3 tbsp. grainy mustard

  • 3 green onions, chopped


DIRECTIONS

Preheat oven to 425F.

Line a baking sheet with aluminum foil. In a medium sized bowl, whisk together maple syrup, soy sauce, garlic and mustard. Place fish on prepared baking sheet and pour the maple soy mixture over top. Bake for approximately 15 minutes, or until fish flakes easily with a fork. Top with green onions and serve hot!
