We can’t get enough of this refreshing summer salad! 

Watermelon Arugula Salad

Yield: 8 servings (as a side)

For the Salad:

  •  One 5oz package of baby arugula
  • ½ a seedless watermelon, cut into cubes
  • 200g feta cheese, cut into cubes
  • ¼ red onion, finely sliced
  • 2 handfuls of fresh basil (or mint) sliced into a chiffonade

For the Dressing:

  •  ¼ cup extra virgin olive oil
  • 1 tablespoon honey
  •   Juice of ½ a lemon
  • Salt and pepper to taste
  • Balsamic glaze to drizzle

Whisk together the extra virgin olive oil, honey, lemon juice and salt and pepper. Place in the fridge if not using right away. Thoroughly wash arugula, and combine with remaining salad ingredients in a large bowl. Toss with the dressing and drizzle with balsamic glaze to finish.
