Roasted Green Beans with Beets, Gorgonzola and Toasted Pine Nuts

- 1lb fresh green beans, washed and trimmed
- ½lb fresh beets, peeled and cut into ¼ inch wedges
- ¼ sweet yellow onion, finely sliced
- 2 tablespoons olive oil
- ¼ cup crumbled Gorgonzola cheese
- ¼ cup toasted pine nuts
- Salt and pepper to taste
Preheat oven to 425F. Toss the green beans, beets and onion in the olive oil, season with salt and pepper and spread out evenly on an aluminum foil lined baking sheet.
Roast uncovered for 45 minutes or until tender, stirring once halfway through cooking time. Sprinkle crumbled Gorgonzola and pine nuts overtop before serving.
