Roasted Green Beans with Beets, Gorgonzola and Toasted Pine Nuts

I consider Gorgonzola an entry level blue cheese, but if you just aren’t into it swap it for goat cheese (or remove it altogether).

Roasted Green Beans with Beets, Gorgonzola and Toasted Pine Nuts

INGREDIENTS

  • 1lb fresh green beans, washed and trimmed

  •  ½lb fresh beets, peeled and cut into ¼ inch wedges

  •  ¼ sweet yellow onion, finely sliced

  •  2 tablespoons olive oil

  •   ¼ cup crumbled Gorgonzola cheese

  •   ¼ cup toasted pine nuts

  •   Salt and pepper to taste


DIRECTIONS

Preheat oven to 425F. Toss the green beans, beets and onion in the olive oil, season with salt and pepper. Spread out the beets (but not the onions or green beans) evenly on an aluminum foil lined baking sheet.

Roast uncovered for 25 minutes. Remove from oven, flip and add in the green beans and onions. Roast for an additional 15 minutes, flipping again halfway through cooking time. Sprinkle crumbled Gorgonzola and pine nuts overtop before serving.
