Mango Coconut Popsicles

Prep time: 15 minutes
Freeze time: 3 hours
Total time: 3 hours, 15 minutes
Yield: 10 popsicles


  • 3 cups organic coconut milk
  • 2 sliced mangos
  • 2 pureed mangos
  • 1 teaspoon honey

Stir together coconut milk and honey until well combined. Add pieces of mango to each mould and fill with the coconut milk and honey mixture until ¾ full. Place in the freezer for 1 hour. Remove from freezer, fill the remaining ¼ with pureed mango and return to freezer for an additional 2 hours to achieve a layered look. To remove the popsicles in one piece, submerge the bottom half of the mould in lukewarm water for 30 seconds, or until the popsicles wiggle loose. Best enjoyed on a hot summer day.
