"Healthy" Chocolate Peanut Butter Fudge (vegan and gluten free)

Yield: 16 squares

For the Fudge:

  • 1 15oz can black beans
  • 1 ripe banana
  • ½ ripe avocado
  • 1 tablespoon vanilla extract
  • 1 teaspoon coconut oil
  • 2/3 cup cocoa powder
  • ½ cup brown sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

For the Icing:

  • ½ cup natural peanut butter
  • ½ cup icing sugar
  • ½ teaspoon vanilla
  • 3 tablespoons almond milk

Preheat the oven to 350F. Grease an 8x8 pan and set aside. Drain and rinse the black beans and place them in a food processor along with all other ingredients for the fudge. Process until smooth. Transfer to the greased pan and bake for 25-30mins or until a knife inserted in the middle comes out somewhat clean. While the fudge is in the oven whisk together all ingredients for the icing. Let the fudge cool completely, cover with icing and then cut into squares. I prefer these cold out of the fridge.
