Take your boring rice side dish up a notch by cooking the rice in coconut milk. Feel free to use light coconut milk if you are looking to cut out some of the fat content.

Yield: 4-6 servings
- 400ml can coconut milk
- 1 ¼ cup water
- 1 ½ cup uncooked jasmine rice
- 1 tsp salt
- 2 tbsp unsweetened coconut flakes
Rinse rice in a fine sieve with cold water until the water runs clear. Bring coconut milk, water and salt to a boil over medium high heat. Stir ingredients until salt is dissolved. Stir in rice, cover, reduce heat to low and simmer for 20 minutes until liquid is absorbed and rice is tender. Remove from heat and let stand for 10 minutes covered. Fluff rice with a fork and stir in coconut flakes. Serve with your favourite Indian or Asian dishes.
