Caramel Energy Bites (sugar & dairy free)

Yield: Approximately 20 one-inch balls
- 2 cups pitted dates (soaked in warm water for 10 minutes and then drained) *see notes
- 2 cups cashews
- 1 tbsp vanilla extract
- 2 tsp coconut oil
- Pinch of salt
- 1 tbsp raw cacao nibs
- 1 tbsp chia seeds
*Do not soak the dates in water if you are using Medjool dates - these are soft enough as is and should blend easily without being soaked.
Place dates, cashews, vanilla extract, coconut oil and salt in a food processor. Blend for approximately 3 minutes, until a relatively smooth/sticky paste is formed, scraping down the sides of the bowl often. With a spoon, stir in cacao nibs and chia seeds. Roll the mixture into 1 inch balls and store in the fridge for up to 1 month or freeze for up to 3 months.
