Crack Cookies

These cookies are seriously addicting, hence the name. Not that I’ve tried crack but I hear it’s very addictive… ANYWAYS. These have salty pretzels, marshmallows, caramel and chocolate chips. They are chewy and delicious.

INGREDIENTS

  • 3 cups all-purpose flour

  • 1 ½ tsp baking powder

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 cup room temperature unsalted butter

  • 1 ½ cups brown sugar

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 big splash vanilla extract

  • 1 cup chocolate chips

  • 1 cup pretzels, chopped

  • 24 caramels, or enough to stuff each cookie with *see notes

  • ½ cup mini marshmallows

  • 24 whole pretzels, to press on top of each cookie

*I used a bag of those classic square caramels that you can buy at the grocery store.  I unwrapped each, cut them in half and then squished them into a square shape again with my fingers.

DIRECTIONS

Preheat oven to 350F. Line a baking sheet (or two) with parchment paper and set aside.

In a medium sized mixing bowl, sift together flour, baking powder, baking soda and salt.

Using a stand mixer or an electric mixer cream the butter and sugar until smooth and creamy. Add in eggs and vanilla and stir until well combined. Slowly add in the dry ingredients, over low speed. Mix until just combined. Fold in chopped pretzels and chocolate chips.

Scoop approximately 3 tablespoons of dough into the palm of your hand. Place a caramel in the middle and form into a ball, ensuring that the caramel is completely covered so that it does not ooze out onto the baking sheet during baking. Continue this process until all of the cookie dough is used up. Place the cookies on the baking sheets approximately 2 inches apart from each other. Gently press a whole pretzel down on the top of each cookie.

Bake in preheated oven for 12-14 minutes or until golden brown on the bottom. Remove the cookies from the oven and switch it to broil. Delicately place 3-4 mini marshmallows on top of each cookie and then place them under the broiler for about 30 seconds, or until the marshmallows are just lightly browned. Keep an eye on them the whole time because this will happen quickly! Remove from the oven and let cool for 5 minutes. Transfer to a cooling rack to let cool completely.
